Breakfast Bake

 


BREAKFAST BAKE

Base: 
4 cups shredded hash browns, thawed if frozen
8 eggs
2 cups shredded cheese whatever you have on hand
1 tsp salt
1/2 tsp pepper
1 cup chopped ham, cooked and crumbled and drained
sausage or bacon

Optional add ons:
1/2 cup soft cream cheese
1/2 cup sour cream

Optional flavor:
1/2 tsp ground mustard
1/2 tsp garlic powder
Onion to taste: chopped, green, flakes or powder
1/4 tsp cayenne
1/2 cup milk or heavy cream

Directions:
  1. Combine your choice of meat, 1 1/2 cups cheese and the hash browns. Add optional add ins.
  2. Place the hash brown mixture into the bottom of a lightly greased 9x13 casserole dish or divide between smaller pans. I used 2 - 6x9 inch pans.
  3. In another bowl, beat the eggs, milk and seasonings. Beat well with whisk.
  4. Pour egg mixture over the hash browns
  5. Bake at 350°F for 25 minutes, remove and top with remaining cheese. Return to oven for an additional 10 minutes.

  1. Yields 6 servings.
Taste testers all feel that some form of onion will really make flavors pop.
For freezing: Bake as directed but don’t add top layer of cheese. Cool and freeze. **Have to test heating**
