Taco Crack

1/2 pound lean ground beef

1 15 ounce can refried beans

4 ounces cream cheese

1/2 cup sour cream

1-2 Tablespoons taco seasoning

2 cups finely shredded cheese - cheddar, Mexican blend, etc

1. Brown ground beef.

2. While ground beef is cooking in microwaveable bowl mix refried beans, cream cheese, sour cream and taco seasoning. Microwave for 2-3 minutes to soften. Mix well to incorporate all ingredients. 

3. In 7x9” baking pan, spread ground beef on bottom. Spread bean mixture on top of ground beef. Spread cheese on top of beans. 

4. Bake at 350F for 15 minutes. 

To serve: 

Option 1: Grab some tortilla chips and scoop it up.

Option 2: Scoop a spoonful into your favorite taco shell. Add lettuce, tomato, guacamole or whatever taco toppings you like. 

Freezer: In process of testing. Tested well. No change in flavor, defrosted in microwave at 50% power for 7 minutes total. There was some liquid on bottom that absorbed and did not affect taste. I will be making more of this soon. I love that it’s has protein and fiber. 

Picky grandkid gave it a 10.
